This rich beef and spinach curry stew is one of my favourite recipes!
Ingredients:
500g beef, cubed
1 onion, chopped or diced
2 cloves of crushed garlic
1tsbp grated ginger
2 tomatoes, chopped
100g of chopped spinach
1 knorrox beef stock cube
175ml plain yogurt,
1bsp of mild or spicy curry powder or paste
Instructions:
Fry beef in 1tsbp of oil until browned, set aside. Fry onion until browned, then add garlic, ginger, curry powder or paste & fry for about 30 seconds.
Return beef to pot & add tomatoes, yoghurt, knorrox beef stock cube & 1/2 cup of water.
Bring to a boil, the reduce heat & simmer for 20 minutes.
Stir in spinach & simmer for 10 minutes or until beef is tender .
Garnish with coriander & serve with rice.
