Lisa’s Crockpot Cabbage Roll Soup

This recipe was submitted by Lisa Berry, Harm Reduction Worker at The AIDS Network.

Ingredients

1 tbsp olive oil

1 lb ground pork and/or beef

1 cup yellow onion chopped

2 tbsp Worcestershire sauce

2 tsp garlic  (minced)

1 tsp paprika

5 cups cabbage  cut into ½ inch strips

6 cups beef broth

1 can diced seasoned tomatoes  (undrained)

1 cup vegetable juice  (mild or hot)

2/3 cup long grain white rice (uncooked)

2 tbsp tomato paste

½ tsp ground allspice

1 pinch salt (to taste)

1 pinch back pepper (to taste)

Fresh parsley (chopped, optional)

Instructions

Step 1 – In a wide skillet, warm up the olive oil until hot, then add the ground pork/beef and onion, followed by the Worcestershire sauce, garlic and paprika. Cook and crumble the ground pork/beef until no longer pink. Drain the excess grease, then set the skillet nearby.

Step 2 – In a 6 quart crock pot, toss in the following ingredients: cabbage, beef broth, diced tomatoes, vegetable juice, rice, tomato paste, allspice, salt and pepper to taste. If needed, stir or rearrange the ingredients to make some room, then add the cooked pork/beef mixture. Give the soup a good stir to mix everything around.

Step 3 – Cover and cook on low for 6-7 hours, or high for 3-4 hours!!

Step 4 – Serve cabbage roll soup immediately with parsley for garnish
