Kelly’s Broccoli Soup

This recipe was submitted by Kelly Rattray, Support Worker at The AIDS Network.

This is a go-to recipe that I have done my best to write down as I tend to cook on the fly, don’t be afraid to experiment with it!

Ingredients:

  • 2-3 crowns of broccoli
  • Pureed garlic (fresh or from a jar, for best results do not use garlic powder)
  • Vegetable stock (enough to cover broccoli)
  • Salt and pepper to taste
  • 2-3 tbsp butter

Instructions:

  1. Heat 2 tbsp butter in a pot over medium-low heat
  2.  Add broccoli and garlic, stir
  3. Cover and sweat the broccoli for 15-20 minutes, stirring occasionally and adding more butter if needed. Do not brown the broccoli or let the pot get ‘dry’
  4. When soft, add enough vegetable stock to cover to about an inch above the broccoli
  5. Bring stock to a boil and then reduce heat to simmer for about 10 minutes
  6. Puree with a blender, and season with salt and pepper to taste
