Every week we gather our friends and fellow organizers at The AIDS Network to talk, plan, create and share. Healthy homemade food is a vital part of our process. This recipe is a drop in favorite (so long as it is paired with a ceasar salad and a chocolate cake). The measures below are meant to feed about 6, so multiply the recipe by 3 or 4 for your own drop in! We are forever grateful to the AIDS Network for their ongoing support and are proud to be a part of this initiative and to share our love of gathering around food with you all.
Ingredients
1lb ground beef
1 can (28oz) canned whole tomatoes
1 can (10oz) tomato paste
2 cloves garlic minced
1 cup chopped onions
1 can (10 oz) sliced mushrooms (or use fresh, or none at all)
1 tbsp dried oregano
1 tsp basil
1 tbsp dried parsley
1 tsp salt
1 cup cottage cheese
ample amounts of grated mozzarella cheese
7 cooked lasagna noodles
Instructions:
Brown meat, add onion and cook until tender. Add mushrooms, minced garlic, herbs and salt, Cook for a few minutes. Add canned tomatoes, break apart, and tomato paste. Cover and simmer for about 30 minutes. Check occasionally and add water if the sauce is too thick.
Place 3 strips of cooked lasagna noodles in the bottom of a 9×13″ glass baking dish, fill in any gaps with the 7th noodle. Cover noodles with half of meat sauce. Cover meat sauce with cottage cheese and sprinkle with mozzarella cheese. Add a second layer of noodles, remaining meat sauce and top with all the cheese you want.
Cover with aluminum foil and bake at 350 for 20 minutes, uncover and cook for another 10 minutes.
Let sit for 10 minutes before cutting.
