This recipe was submitted by Karyn Cooper, Director of Programs and Services at The AIDS Network.

This recipe takes the deliciousness of tacos and pairs it with tater tots.  Not only is it delicious, but also a super easy meal that can be adjusted depending on your preferences.

Instructions:

Prepare tater tots according to package directions.  The crispier, the better.

Prepare the toppings.  My preferences are:

  • Meat (pulled pork, ground beef, or whatever you like)
  • Iceberg lettuce
  • Diced onions
  • Diced avocado
  • Diced peppers
  • Beans
  • Hot peppers
  • Salsa
  • Sour cream
  • Grated cheese

When the tater tots are ready, place some in a bowl, top with toppings and enjoy!

While we may be physically distant, we can still come together in a spirit of sharing and giving.
