Hexe’s Thai Green Chicken Curry

No glitter or cauldron required! Presenting a simple yet quirky recipe Hexe often conjures up for her coven of ghouls and ghosties. Whether your face beat has eaten up too much of your time or you’re in the mood for a little kick to the hip pads this Green Thai Curry will have you cackling with delight. Hexe Noire approved – five out of five broomsticks.

Ingredients:

* 1 tbsp vegetable oil
* 1/4 jar of Blue Dragon Green Thai Curry Paste
(Available at No Frills and Food Basics)
* 1 can of Coconut Milk
* 2 medium sized cooked chicken breast, thinly sliced
* 1 red or green pepper -deseeded and thinly sliced
* 1 can of bamboo shoots -drained

Instructions:

1. Heat the oil in a large saucepan and fry the paste for 4-5 minutes or until oil seperates and the paste smells fragrant.
2. Add the coconut milk and mix with the paste, stiring well
3. Once the coconut milk is hot, add the chicken slices, pepper slices, and bamboo shoots. Cook until your peppers are tender.
4. Ensure it is piping hot and serve immediately over a bed of steamed rice.

While we may be physically distant, we can still come together in a spirit of sharing and giving.
