This recipe was submitted by Falen Savage, volunteer team lead on our ‘One Pot’ food security program at The AIDS Network.
Ingredients:
2 cans of crushed tomatoes
1 can of diced tomatoes
Half can of tomato paste
2 cans of red kidney beans
2 cans of 6 bean blend
1 can of black beans
1 can of corn
Half a diced white onion
Half a stalk of diced celery
2 diced peppers, 1 red 1 green
5lbs of ground beef (can be left out for veggie folks)
1 cup of chili spice
Half cup of ground cumin
Tablespoon of cayanne
1 tablespoon salt
Instructions
Brown ground beef in a pan, drain of fat and add onion to sweat them down. Then add other chopped vegetables to mixture, cook until getting softer but not total mush. In a large pot, mix all canned ingredients together with what you had in the pan (except corn) and bring to a hard simmer, mixing in spices. Cook for a good half hour to 45 minutes 7 until your house smells amazing and eat it with many a bread
