Falen’s Banana Loaf

This recipe was submitted by Falen Savage, volunteer team lead on our ‘One Pot’ food security program at The AIDS Network.

Ingredients:

1 cup of whole wheat flour

1 cup of quick dry oats

1 tsp baking soda

Half tsp cinnimon

1 cup of chopped almonds or walnuts or both if you’re feeling indecisive

1 Cup of chocolate chips

4 ripe bananas, peeled and frozen

2 eggs

2 table spoons of greek yogurt

Instructions: 

Mix together flour, oats, baking soda, cinnimon and nuts together in a big bowl, then add bananas, eggs and yogurt to the dry ingredients and mash it all together until everything is moist. Yes moist. Add chocolate chips and swirl them in.

Butter a bread pan heavily, then pour your banana mix into it.

For the topping, keep the wet banana bowl and add in Half cup of brown sugar Half cup of quick oats Drizzle of honey Mix it roughly until you have little chunks and use a spatula to scrap the mix out of the bowl and onto the loaf.

Bake in a 350 degree oven for 45 to an hour, checking at 45 mins with a toothpick. If its no longer sticking to the toothpick,its done. If the top is browning too quickly, cover with tinfoil.

While we may be physically distant, we can still come together in a spirit of sharing and giving.
