I always find that carrot-themed desserts are super controversial. People either LOVE them, or HATE them. I happen to be one of the people who LOVE carrot-themed desserts, and I personally guarantee that these are the best carrot muffins in existence. They are moist, flavourful and are equally good ‘naked’ as they are topped with cream cheese icing. And, since the recipe calls for two whole carrots, they must be somewhat healthy too, right?
Ingredients:
-1 cup flour
-1/2 tsp. baking soda
-1 tsp. baking powder
-1/4 tsp. salt
-1 tsp. ground cinnamon
-1/4 tsp. nutmeg
-1/2 cup white sugar
1/2 cup brown sugar
-1/2 cup vegetable oil
-2 eggs
-1 tsp. vanilla extract
-1-1.5 cups shredded carrot (about 2 medium carrots)
Optional Ingredients:
-1/3-1/2 cup shredded coconut
-1/3-1/2 cup chopped walnuts
-1/3-1/2 cup raisins
*makes 12-16 muffins
Instructions
1. Preheat oven to 350 degrees Fahrenheit.
2. In a large bowl, combine the flour, baking soda, baking powder, salt, cinnamon and nutmeg. Set aside.
3. In a large bowl, beat the eggs, and mix in the white and brown sugar. Stir until combined. Then, add in the oil, vanilla extract and stir.
4. Fold in the shredded carrots.
5. Slowly mix in the dry ingredients with the wet ingredients.
6. Fold in the Optional Ingredients.
7. Spoon batter into a muffin tin greased with butter or lined with paper cups.
8. Bake for 15-20 minutes, or until a toothpick can be inserted to the centre of the muffin and is clean when removed.
9. Once cooled, enjoy the muffins as-is, or top with your favourite cream cheese icing!
